Disney Recipe: ‘Ohana Breakfast Bread

This is a Disney Recipe for the ‘Ohana Breakfast Bread which is used for a number of dishes at Disney’s Polynesian Resort such as the ‘Ohana Bread Pudding.

This recipe is enough to make one 9×13 pan, and should be enough for 6-8 servings.

Ingredients

  • 1 cup crushed pineapple (you can use canned or fresh)
  • 1 cup unsweetened coconut
  • 1 cup sugar
  • 2 tbsp cornstarch
  • 1 egg yolk
  • 1 3/4 cup water
  • 2 tbsp shortening
  • 4 1/s cup bread flour
  • 1/2 tsp salt
  • 1/3 cup sugar
  • 1 tbsp instant yeast

Directions

1.) Place crushed pineapple and coconut in a medium-sized bowl.

2.) In another bowl, mix together sugar and cornstarch with a small whisk. Add this mixture to the pineapple and coconut mixture and stir well to combine.

3.) Place mixture in refrigerator for at least an hour.

4.) Into a large bowl (and in this order) combine water, egg y9olk, shortening, flour, salt, sugar, yeast and mix on lowest speed on a standard mixture with your dough hook or paddle attachment.

You can also mix by hand until the sides of the bowl come away clean and the dough moves around together.

5.) Cover with plastic wrap and allow dough to rise until it doubles in size. This can take 2-4 hours depending on air temperature.

6.) Once dough rises, roll onto a floured surface until it is at two inches thick.

7.) Spread the pineapple and coconut mixture over the top surface of the dough.

8.) Fold dough over onto itself and place it into a greased cake pan measures 9×13.

9.) Use a pizza cutter and cut the dough into squares and spread it out evenly into the pan.

10.) Place pan into a warm oven of right at 110 degrees and allow the dough to rise again, but this time, about halfway up the pan sides.

11.) Once it rises, bake the dough to a golden brown at 325 degrees for 20-25 minutes.

12.) Allow to cool and serve for breakfast or use in ‘Ohana Bread Pudding.
