One of the most cherished dishes at Epcot is that of the Canadian Cheddar Cheese Soup at the Le Cellier Steakhouse in World Showcase. It is long sought after and many can’t wait to have it again, but now you can make it in your very own home.
This Disney Recipe brings about eight servings of the Cheddar Cheese Soup.
Ingredients
- 3 cups whole milk, warmed
- 10 tbsp butter
- 1/2 pound smoked bacon – finely chopped
- 1/2 cup celery – finely chopped
- 1/2 cup carrot – finely chopped
- 1 medium-size red onion – finely chopped
- 2 cups chicken stock, warmed
- 1 tsp of Tabasco sauce
- 1/2 cup Dark Ale
- 12 oz. shredded white cheddar cheese
- 1/2 tsp Worcestershire sauce
- salt and pepper to taste
- chopped chives as garnish
Some do like to add butter (8-10 tbsp) to the soup, but that is your choice.
Directions
1.) Saute’ bacon until wilted, but don’t brown it.
2.) Add the celery, carrots, and onions into a large pot and then put in the cooked bacon as well.
3.) Sprinkle in flour and stir constantly for 2-3 minutes. At this point, slowly pour in your milk and chicken stock a little bit at a time. Don’t do it fast as you do not want to get lumps in it.
Once your mixture is up to a boil, cover the pot and let it simmer over low heat for a good 15 minutes.
4.) After 15 minutes, take the cover off, remove from heat, and carefully whisk in your Worcestershire sauce, dark ale beer, Tabasco Sauce, and cheese.
This is when you’ll add in your salt and pepper. Continue to taste so you know how much to add for your liking. Some don’t feel it needs either, but I’m one that likes to have a good bit of both in it.
5.) Once the cheese is melted, simply serve. Spread some chopped chives on top and serve with your favorite choice of bread. Here is a recipe for the Pretzel Bread Sticks served at Le Cellier.
